if you start to learn classical guitar on a classical guitar, but then buy an acoustic guitar, can you still continue to learn classical but on your acoustic guitar?

You could but it's not ideal because it's so much harder to play classical on an acoustic guitar. The strings for one are so much harder to play classical on.

I think it's a case of "horses for courses" i.e. the right guitar for the right job. If I were you I'd use different guitars and switch between the two when you were changing styles.
